Born To Bake



Coconut Blueberry Muffins


Wheat-free, high fiber, low carb,
and incredibly delicious


Preheat oven to 400 degrees; grease/line 6 muffin cups
then


Whisk until blended:

3 eggs
2 T coconut milk
1 t vanilla
2 T melted butter or canola oil
3 T honey

Sift together and blend until all lumps are out:

1/4 cup plus 2 T coconut flour
1/2 t baking powder
1/4 t salt


and then very gently fold in:


1/2 cup frozen blueberries


Divide into 6 muffins and bake 15-18 minutes.


Use organic if you can; the flour is expensive but you use so little that it's fine.

Someone is a big Springsteen fan, Claudia! This sounds interesting-- I'll have to try it. I'm headed to the co-op now. Hopefully, they'll have coconut flour-- I've never heard of that.

I didn't expect to find it in Polson, but there it was, right at the health food store. Organic, too! Also, these are non-dairy. I forgot to say that.

I didn't expect to find it in Kalamazoo, either, but there it was-- all the way from Oregon: Bob's Red Mill organic coconut flour!
They're in the oven right now....

This is so great, Anita. So tell me: did you find a way around the somewhat wet top syndrome I'm having with these? The blueberries seem to leave the top a little undone, but I don't want to overbake the rest...I've started using paper cupcake liners but still... how are yours? Do you like them?

When I saw how those tops looked after the recommended cooking time, I thought that maybe it's my oven-- and gave them just a couple extra minutes-- which seemed to fix that. The bottoms didn't burn, but I was using the air-bake muffin tins. Next, I'm going to try a double batch and use the muffin stoneware.
Did you use the canola oil or the butter?

Used organic butter and then tried canola -- much prefer the butter!

Claudia & Anita,
I also made them last night for my kids school teachers brunch. I had wet tops and stuck them under the broiler for a few minutes. They looked good but I didn't get to taste any, so....we'll see what is said tomorrow.

What any ideas on what to do with all of the left over coconut flour? I am all muffin'd out!

They were a big hit with the teachers!

Oh that is the perfect word for it: muffin'dout. In my case, coconutmuffin'dout. I just folded the top of the bag over tightly and taped it shut. I'll look up more recipes in about a month or two, when I am over my holiday hangover. (rich food, that is!)
